The professor was very passionate about his work, a quality I really admire. He gave a thorough and comprehensive presentation over food insecurity, food waste, and the consequences of how our unsustainable system would impact the future. He even told us about his current research!

I come from a small town in Southwest Arkansas where many families have to deal with food insecurity. For this reason, food sustainability is an issue that is important to me. I have raised poultry my entire life, so I want to work in the larger scale food production industry to help feed people all over the nation. Dr. Kwofie’s lecture helped us visualize the urgency to improve the sustainability of local, national, and the global food system.
